Instructions
Step 1
Cut the whole chicken into 3-5cm across small pieces; Put chopped chicken pieces in a pot filled with water, add in cooking wine, bring water to boil for 5-10 minutes.
Step 2
Remove chicken from the broth to drain. Start with a new pot of water, add in chicken and sliced ginger, and bring to boil for 30 minutes.
Step 3
Put shiitake mushroom in the broth to cook for about 20 minutes, then further add in Chinese dates and goji berries to cook for another 20 minutes. Season with an appropriate amount of salt, garnish with spring onion. Serve warm.
