Instructions

Step 1
Slice ginger and chop scallion; Split mushroom into half (optional).
Step 2
Put whole chicken in a pot with slices of ginger, shitake mushroom and fermented cucumber (with pickle juice), fill the pot with 2500ml water. Simply bring water to boil and simmer for 2 hours on low or medium heat.
Step 3
Garnish with chopped scallion and serve warm.
