Instructions
Step 1
Bake chicken breasts in oven at 425 degrees F for 40 minutes.
Step 2
In a large frying pan, saute the onion slices, chopped carrots, and red pepper slices in 1 Tablespoon avocado oil.
Step 3
Add chopped broccoli pieces and zucchini slices to pan. Turn heat to low and cover with lid.
Step 4
Mix the coconut aminos, honey, and cornstarch in a small bowl. Pour over veggies in pan and stir everything. Cover with lid.
Step 5
Cut the baked chicken into small pieces. Add chicken to frying pan and stir to coat in sauce.
Step 6
Serve over cooked rice.
