Step 1
In a large bowl, whisk together the eggs, milk and salt. Set aside.
Step 2
Brown the sausage, onion and green pepper in the Stovetop Oven over medium-high heat, until no longer pink. Add the salsa and stir to blend. Adjust the amount od salsa to your liking. Lower heat to medium-low setting. Top sausage mixture with half of the potatoes. Cover with cheese and the remaining potatoes. Pour the egg mixture over the omelet. Cover and Bake at 350 for 20 to 25 minutes, or until the center is set. Let sit 10 minutes. Invert omelet on to a large serving dish and cut into wedges.
