Instructions

For the cake

Step 1
Preheat oven to 350 degrees
Step 2
Combine brown sugar, eggs, apple sauce, olive oil, white sugar, vanilla, flour, baking soda and powder, cinnamon and salt to a bowl and combine
Step 3
Add shredded carrots, mix well, add to 2 cake pans
Step 4
Add to 350 degree oven, bake for 30 minutes or check with a toothpick

For the icing

Step 5
While the cake is baking make your icing
Step 6
Add icing sugar, cream cheese, vanilla and butter in an electric mixing bowl
Step 7
Mix the icing until soft and fluffy
Step 8
Spread the icing on the cake once the cake is cooled, otherwise the icing will melt!
