Step 1
cook egg in a pan of boiling water for 6 minutes *for soft boiled* or 10 minutes for * hard boiled* or Crack egg into simmering water with 1 tablespoon of vinegar cook for 3 minutes for Poached egg. if boiled peel egg and cut into desired pieces
Step 2
Remove the flesh from the avocado using a spoon, cut into wedges *or slices* drizzle with lime juice, and arrange in a serving bowl next to the tomatoes and egg.
For the Sauce
Step 3
Mix Tomato paste with oil and Sambal oelek, then add the cumin and season with salt and pepper. Work in 1 or 2 Teaspoons of water for desired consistency.
Step 4
Season everything to taste, then dollop the sauce over the top and sprinkle with chopped parsley
