Instructions

Step 1
Cook quinoa as above. Refrigerate until cool.
Step 2
Chop the English cucumber into 1/2 inch pieces, drain & coarsely chop the peppers & coarsely chop the olives. Add everything to the bowl.
Step 3
Add the cooled quinoa and toss to combine and evenly coat in the dressing.
Step 4
Crumble the goat cheese into the salad and toss again gently to combine. Serve at room temperature or chill.
