Ingredients

1.5 lbslean beef
grass fed, cut into cubes
1 Tbspolive oil
or avocado
½ cupcoconut aminos
¼ cuplemon juice
1 Tbspdijon mustard
1 Tbspworcestershire sauce
1clove garlic
minced
1 tspblack pepper
1 ½ tspsalt
8mushroom caps
1red onion
quartered
1bell pepper
cut into 2 inch squares into 1/2 inch rounds
2summer squash
cut
2zucchini
cut into 1/2 inch rounds

Instructions
Step 1
1. Whisk together oil, coconut aminos, lemon juice, Worcestershire, garlic, black pepper, and salt together in a bowl. Separate 1⁄2 cup of the marinade into a separate bowl. Add beef to the bowl with more marinade, and toss to coat. Add the mushrooms to the bowl with less marinade, and toss to coat. Cover and marinate the meat and mushrooms in the refrigerator for at least 1 hour or overnight.

2. Preheat a grill over high heat, and lightly oil the grate. Remove the beef and mushrooms from the marinade, shaking off any excess liquid. Pour marinade into a small pan, and bring to a boil over high heat. Reduce to medium low, and simmer for 10 minutes – set aside for basting.
Step 3
3. Thread pieces of the bell pepper, beef, mushroom, onion, and squash into skewers. Cook skewers on the grill, turning frequently and brushing generously with the marinade, until browned on all sides, about 10-15 minutes.
