Instructions

Step 1
For the syrup, in a medium saucepan combine the sugar, water, cinnamon stick and squeeze of lemon juice. Bring it to a boil (avoid stirring). Once it comes to a boil, reduce the heat to a low and simmer for 10 minutes. Remove from the heat, discard the cinnamon stick and let it cool to room temperature.

Preheat the oven to 160C (fan)
Step 3
In a food processor pulse the pistachio until coarsely ground.
Step 4
Melt the butter.
Step 5
Brush the inside of the 23-by-23cm baking tray with a little butter.
Step 6
Prepare the phyllo dough by trimming it with a knife to fit the bottom of your baking dish.
Step 7
Place 1 sheet of phyllo on the bottom of the baking tray, brush lightly with melted butter and layer another phyllo sheet on top, also brushing with butter
Step 8
and repeat 9 more times, brushing each layer with butter( total 11 layers).
Step 9
Spread 1/3 of pistachios on phyllo evenly, then layer 2 more buttered phyllo sheets. Spread 1/2 of the remaining pistachios and cover with 2 buttered phyllo. Spread the remaining pistachios (reserve some for garnish) and cover with 8 layers of buttered phyllo.
Step 10
Cut the pastry into a diamond or square shape (make sure to cut through to the bottom of the pan), and pour any remaining butter evenly over the pan.
Step 11
Bake baklava for 30-40 minutes, or until golden brown.
Step 12
When ready, pour the syrup evenly over the baklava. Let it cool to the room temperature and enjoy!
