2cloves garlic
peeled

1white onion
medium, peeled, quartered

30golive oil

1dried ancho chilli
deseeded, roughly chopped

4dried guajillo chilli
deseeded, roughly chopped

1 Tbspsesame seeds

1 tspcinnamon powder

1 tspdried oregano

12 tspcracked black pepper

¼ tspall spice

500gliquid chicken stock

½ tspcracked black pepper

chicken stock
500 liquid, 1 tbsp concentrate g

500water
10gOaxacan chocolate
or 70% dark chocolate

½ tspsalt

700gchicken thigh
or breast, cubed small
Instructions
Step 1
1. Add garlic and onion to mixer bowl. Chop 3 sec/speed 6/MC on. Scrape mixer bowl down
Step 2
2. Add oil, chillies, sesame seeds and spices to mixer bowl. Cook 5 mins/100°C/speed 1/MC off.
Step 3
3. Add stock to mixer bowl and cook 15mins/steaming temp/speed 1/MC off. Place simmering basket on top to avoid splatter
Step 4
4. Add chocolate and rasins to mixer bowl. Blend 1-2mins/speed 9/MC on - increasing speed gradually, until the paste is fine. Taste the sauce after and add salt to desired seasoning. Scrape down mixer bowl.
Step 5
5. Add chicken to mixer bowl and cook 15 mins/100°C/slowest speed/reverse/MC on.
Step 6
Budget Friendly: omit chicken from this recepie as per usual. USA a sauce to spoon over grilled meat or hard-boiled eggs. Freeze in portions.
