Instructions
Step 1
Head up vegetable oil to 350F.
Step 2
In a large bowl, combine risotto, eggs, parmesan cheese, 1/2 cup of breadcrumbs.
Step 3
Roll the risotto mixture into balls, about 2 tablespoons each.
Step 4
Press a cube of mozzarella into the center of each risotto ball.
Step 5
Roll each ball in the remaining breadcrumbs.
Step 6
Fry the balls until golden, about 4-5 minutes. Make sure to place on paper towels after to absorb the excess oil. Serve with marinara sauce.
