Instructions
Step 1
In deep but narrow container, such as a glass pyrex measuring container, crack the egg without breaking the yolk.
Step 2
Carefully add the remaining ingredients to prevent breaking the yolk.
Step 3
Using an immersion blender, cup the egg yolk. Turn on the blender and hold in place until ingredients are incorporated and the creamy mayo starts to form. Taste for seasoning and adjust if necessary.
Step 4
Store in fridge 4-5 days
