Ingredients

2red apples
I’ve used both Honeycrisp and Fuji for this recipe
1 Tbspcoconut oil
2 Tbspmaple syrup
2 tspground cinnamon
separated for apples & batter
2bananas
ripe, mashed
2flax eggs
2 tbsp ground flax, 4 tbsp. water, mix & let sit for 5 mins
¼ cnon-dairy milk
⅓ ccoconut sugar
1 coat flour
¾ calmond flour
1 tspbaking soda
Instructions
Step 1
1. Preheat oven to 350 2. Skin (optional), core & chop the apples

Step 2
3. Heat up coconut oil in a pan and add the chopped apples
Step 3
4. Mix so that the apples are coated in the oil then add the maple syrup and 1 tsp. cinnamon and mix to make sure apples are coated again
Step 4
5. Let apple chunks cook for about 8 minutes or until soft
Step 5
6. Add the rest of the ingredients, including the rest of the cinnamon (1 tsp.) to a large bowl or stand mixer and mix until a batter forms
Step 6
7. Add about 2/3s of the apple chunks to the batter and mix again
Step 7
8. Fill a lined or silicone muffin pan with the batter, add the rest of the apples to the top of each muffin and bake for 25-30 minutes
