Instructions
Step 1
In a glass bowl, add 5 cups of flour and 1 tsp salt. Mix to combine.
Step 2
In a glass measuring cup, mix 2 1/2 cups of warm water package of yeast 2tsp honey Allow to sit for 5 minute and stir into the flour with a wooden spoon until the dough just comes together.
Step 3
Transfer dough to an oiled bowl cover with tea towel for 8 hours or up to overnight.

Step 4
Deflate and fold the dough 4 times.
Step 5
In an 9 x 13 dish, drizzle with oil and turn the dough in the oils dish to coat. Cover and let dough rise for 8 hours.

Step 6
Heat the oven to 450ºF.

Step 7
Once risen the dough should fill the pan. Drizzle with additional oil and use your fingers to press holes down to the bottom of the pan but not through the dough.
Step 8
Sprinkle with herbs and salt.
Step 9
Place in the oven and bake 20-30 minutes or until golden.
