Step 1
Spread a handful of mozz on one piece of the bread.
Step 2
Scramble 2 eggs low and slow with a dash of dried oregano
Step 3
Place eggs on top of the cheese covered bread.
Step 4
Add a few pieces of fresh basil, tomatoes, and a drizzle of balsamic, and then I tried to go panini style and press the sandwich in my waffle maker! Or cook in a greased panini or regular pan like a grilled cheese for a couple min on each side, pressing down.
