Burrata + Roasted Red Pepper Toast with Basil Chili Garlic Drizzle

Grilled sourdough toast topped with creamy burrata cheese, roasted red Romano peppers and drizzled with my homemade basil chili garlic dipping oil (recipe for basil dipping oil can be found on my Whisk profile or on the Lace Bakes community on Whisk). This toast is an explosion of flavours and textures - you will love it!

Instructions

Roast the peppers

Step 1
Place sliced peppers into a small baking tray. Drizzle with a bit of olive oil and season with salt and pepper to taste. Air fry at 190C/375F for 8 minutes, or bake in 200C/395F oven for about 10 minutes. Peppers should have softened and will be starting to char around the edges.

Grill the bread

Step 2
While the peppers are roasting, start grilling the toast. Drizzle the bread lightly with a bit of olive oil, and grill it on both sides in a medium sized frying pan until golden and crisp on both sides. By the time this is finished, your peppers should be cooked. Of course if you'd prefer to simply toast your bread in the toaster that is fine too. I love the flavour of the grilled bread, but it's not necessary.

Assemble the toast

Step 3
Spread your burrata cheese onto the grilled toast, pile on the roasted red peppers and then spoon over some of the basil chili garlic dipping oil. Enjoy!
