½ cmayonnaise
1 ⅓ cbananas
mashed fully ripe
1 ½ cflour
1 csugar
1 tspbaking soda
1 tspsalt
½ cpecans
chopped

Instructions
Step 1
Heat oven to 350F.
Step 2
Beat egg, mayo, and mashed bananas in a large bowl with a whisk until blended. Combine flour, sugar, baking soda, and salt. Add to banana mixture; stir just until moistened. Stir in 1/2 cup pecans.
Step 3
Pour into parchment lined 9”x5” loaf pan. Top with the maple pecan mixture.
Step 4
Bake 1 hour or until toothpick inserted in the middle comes out clean. Cool bread in pan 10 minutes. Remove from pan to a wire rack; cool completely.
