Brown Sugar Pork Medallions with Parmesan Roasted Vegetables

Instructions
Step 1
Preheat oven to 400 degrees. Wash produce. Prep baking sheet.
Step 2
Halve brussel sprouts. Peel and cut carrot into 1/4" slices. Pat pork tenderloin dry and season with salt and pepper.
Step 3
Ross brussel sprouts and carrots with 1T olive oil, salt and pepper. Spread onto prepared (foil lined) baking sheet. Roast 15-17 min.
Step 4
Heat medium pan to medium-high with 2 tsp olive oil. Brown pork on both sides, then transfer to oven and cook to internal temperature of 145 degrees
Step 5
Return pan to heat and add demi-glace, brown sugar and 1/4 cup water. Stir until desired consistency (2-3 min). Remove from burner and stir in butter.
Step 6
Top pork with sauce and vegetables with grated parmesan.
