In a small mixing bowl, whisk together vinegar, honey and thyme. Slowly pour in olive oil, while whisking constantly, until combined. Season to

Place watermelon, mint, red onion, feta and honey dressing in a large serving bowl. Toss gently to coat the watermelon with the dressing.

When ready to serve, drizzle balsamic vinegar over the salad and garnish with pistachios.
