Instructions
Brine/Season the Chicken
Step 1
Brine the chicken in pickle juice for 2 hours completely submerged. Remove the chicken from the brine, pat dry and season lightly with Holy Voodoo

Prep your chicken for frying
Step 2
Make a station with a pan of chicken and then 2 medium bowls where we will place the chicken into the dredge, then the egg wash, then the dredge again. Bowl 1: Breading + 1 to 2 Tbsp of Holy Voodoo Mix well Bowl 2: eggs, milk , and hot sauce double coat and then fry (Internal temp of 165) place on wire rack to cool

Mix the hot oil (some people prefer to sub melted lard), cayenne (adjust this to your preference of heat level), brown sugar and Holy Voodoo in bowl. Careful as this oil is very hot. Spoon this mixture over each piece of chicken to your liking.

Mix garlic, mayonnaise, and hot pepper sauce in a small bowl; cover and chill. Toss onion, jalapeño, cabbage, pickles, and pickle juice in a large bowl to combine; cover and chill.
