Rainbow slaw

The most colourful slaw there ever was.. this is my rainbow slaw! The cabbage gives it an amazing crunch and the sweetness of the mango tastes wonderful with the other vegetables. This slaw is GF and vegan, and is a great side to tacos or chicken or a perfect standalone dish.

Instructions

Step 1
Shred your cabbage and slice your tomatoes in half and your avocado and mango into small chunks. Transfer into a large bowl.
Step 2
Add your coriander, lime juice, 1-2 tbsp olive oil, and season well
Step 3
Give it a good mix, then consume immediately or cover well and keep in the fridge before serving
Step 4
This will last a day. Whilst it will still taste good the mango and avocado will start to brown, so best consumer straight away
