Step 1
I prefer to make my own chicken stock using leftover scraps of various vegetables and meat bones I leave in a bag in the freezer! This makes the soup so much more flavorful, but if you want to be a basic B and use store bought stock… I won’t judge ya. If you use scraps, simmer those bad boys on low in 5 cups of water for about 30 minutes (but the longer, the better).
Step 2
While that’s simmering, cut up your chicken into bite size pieces and sauté on medium heat, in a little bit of olive oil, until browned.
Step 3
While the chicken is cooking, in a separate pan, cook diced onion and garlic on medium-low until translucent.
Step 4
Once those are all cooked, drain the chicken stock from the vegetables and replace the leftover stock back into the pot. Add the cooked chicken, onions, chicken bullion, and garlic. Here is where you add your spices. I prefer fresh herbs, but if you only have them crusty dried spices, that’s cool too.. add the butter now, too.
Step 5
Bring the pot to a boil, and then reduce to simmer and cover with a lid. Let these babies sweat for a good 30 minutes before adding your pasta of choice. I like breaking up angel hair into little pieces.
