Step 1
Shred the cheese
Step 2
Cook the macaroni al dente
Step 3
Chop Bacon, then Dice the Red Onions / Jalapeno

Cook Bacon , once bacon is mostly cooked add in red onions & jalapeno until softened. Remove from skillet and set aside save some of the grease for later.
Step 5
Begin the roux, melt the butter in a clean pot. Once butter is melted begin adding the flour slowly until the roux is balanced. Let the roux cook for about 15 min stirring constantly.
Step 6
Once the roux has come of color add the milk and spices. Reduce the heat to low-med and let the milk combine with the roux. It will start to thicken and become consistent. Turn off the heat
Step 7
Once the roux mixture has cooled off slightly then add your cheese, stir until all the cheese has melted. Turn heat back on to low if any is not melting. Be careful though, heating it up too much will burn the cheese and cause it to separate.
Step 8
Once the cheese mixture is fully combined add in the macaroni, bacon, onions, and jalapeno. Mix till combined
Step 9
Place in a large pan or 2 in some cases,
Step 10
Add more cheese on top, bread crumbs if desired, throw in the oven until the cheese is melted at 400 then serve
