Boiled Christmas Cake

For Christmas I steep enough fruit, almonds and extra maraschino cherries to make four cakes in about 1/2 bottle of brandy for about a month before baking.

Instructions

Step 1
Place fruit, sugar, water, butter, golden syrup, cocoa, spice and instant coffee in large saucepan. Bring to boil, stirring. then simmer, uncovered for 10 minutes.
Step 2
Stir in carb soda, cover & cool to room temperature.
Step 3
Meanwhile, line base of 20cm circular cake tin with baking paper, bringing paper 5cm above edge of cake tin.
Step 4
Fold in remaining ingredients & pour/spread into prepared pan. Decorate top with whole almonds & maraschino cherries.
Step 5
Bake in slow oven for approximately 1 1/2 hours & allow to cool in pan.
