Cheesy Garlic Buns

Instructions

Tangzhong (flour paste)

Step 1
Over low heat, mix together the milk and flour until it comes together into a thick paste.

Once it is a thick paste, remove it from the heat and let it cool to room temperature.

Milk Bread

Step 3
In a stand mixer, mix together the yeast, egg, sugar and milk.

Allow for the yeast to bloom for 10 minutes. If using dry active yeast, you may omit the waiting period.

Add in the salt, tangzhong and flour.

Knead the dough with a dough hook at the lowest speed your stand mixer allows for 10 minutes or until the dough pulls away from the sides of the bowl. If you are kneading by hand, knead the dough for about 17-20 minutes or until the dough is no longer sticky.

Scrape down the sides of your bowl halfway in.
Step 8
After ten minutes, add in the softened butter and knead the dough until the butter has completely incorporated into the dough and has become smooth. This takes about 5-6 mins.

Remove the bowl from the stand mixer.

Cover with a damp cloth and allow to proof at room temperature for 2 hours or until the dough has doubled in size.
Step 11
After 2 hours, the dough should have doubled in size.

Gently pull the dough from the bowl onto a lightly floured surface.
Step 13
Split the dough into 8 or 10 even pieces.

Roll each dough piece into a sphere and flatten it into a circle.

Place a small block of mozzarella cheese in the middle of the dough and fold together the sides to encase the cheese.

Repeat this step for the rest of your dough balls.

In a baking dish, butter the dish so that the buns do not stick.

Place the buns about one inch away from each other.

Cover the baking dish with a damp cloth and allow for the buns to proof for 1 hour.

Egg Wash

Beat together the egg and milk.

After the buns have proofed for an hour, brush the buns evenly with egg wash.

Baking

Preheat your oven to o 350°F.

Bake the buns for 20-25 mins or until they are golden.

Garlic Butter

Melt the butter in a bowl.

Add in the garlic and seasonings.

After the buns have been removed from the oven, immediately brush a generous amount of garlic butter all over the buns.
