2 lbsred potatoes

2celery ribs
diced

4radishes
diced

½ cgreen onion
or shallot

6 slicesbacon
cooked & crumbled
Dressing
Instructions
Step 1
In large pot, cover potatoes with 1" salted, cold water. Bring to a boil, reduce heat, & simmer about 15 min or until fork tender. Careful not to overcook



Step 2
Drain potatoes, let cool, cut into cubes, & chill in the refrigerator. (Best to fully chill, about 2 hrs)
Step 3
Cook bacon, prepare vegetables & dressing













Step 4
In a large bowl, mix chilled potatoes & dressing. Fold in celery, radishes, green onion, & crumbled bacon.
Salt & pepper to taste
