Ingredients

0.5 lbextra lean ground chicken
1 Tbspbutter
1 tspolive oil
2carrots
medium
0.5 headcauliflower
2potatoes
medium peeled
3 ½ cupschicken broth
1 ¾ cupsreduced fat shredded cheddar cheese
1onion
medium, chopped
2garlic cloves
minced
2 Tbspall purpose flour
scallions
for garnish
Salt
pepper
paprika
cayenne
onion
garlic powder
Instructions
Step 1
Heat the olive oil, and add the onions and garlic. Sautee till soft.
Step 2
Add in the ground chicken and add all spices. Break into little pieces as it cooks.
Step 3
Add the carrots and flour. Saute for another 1 min to let flour cook.
Step 4
Add in chicken broth, potatoes and cauliflower, and stir. Bring to a boil.
Step 5
Reduce to low heat and let simmer till potatoes and carrots are soft.
Step 6
Remove the cauliflower, and blend with some of the soup liquid and return to pot.
Step 7
Stir in cheese. Garnish with scallions.
