Kaci's Avocado Bread

This avocado bread is very similar to banana bread or zucchini bread. It borders the line between sweet and savory. Spreads and toppings will dictate the flavor profile. I tried making several various avocado bread recipes, this is my take. In my opinion, the nutmeg is what makes this recipe great. There can be a bitter/odd aftertaste that I feel the nutmeg helps eliminate.

Instructions

Step 1
Preheat the oven to 375 degrees F. Spray a 9-by-5-inch loaf pan with cooking spray.

Whisk together the flour, baking powder, baking soda, salt and nutmeg in a bowl; set aside.
Step 3
Add the teaspoon of white vinegar to the half-and-half and stir to combine. Set aside.
Step 4
Using a stand mixer with the whisk attachment attached, whisk the avocado and sugar on med-high until smooth. Add eggs one at a time to incorporate, reducing speed to medium. Add half-and-half and vinegar mixture, followed by the vanilla extract. Whisk on medium until ingredients are fully incorporated and mixture is smooth.
Step 5
Remove bowl from mixer and fold in dry ingredients.
Step 6
Pour the batter into the prepared loaf pan and bake until golden brown on top and a toothpick inserted in the center comes out clean, 45 to 55 minutes. Let cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
