Celeriac & Blue Cheese Soda Bread

Instructions

Step 1
Preheat your oven to 180°C/Fan 160°C/Gas 4. Sift the flour into a large mixing bowl. Add the grated celeriac, a small pinch of salt and a generous pinch of black pepper. Stir to mix. Add the crumbled stilton and stir again to mix well.
Step 2
Whisk the milk and egg together in a jug. Pour into the dry ingredients and gently fold through, until the mix comes together to form a slightly wet but reasonably firm dough.
Step 3
Turn out onto your work surface and shape into a round loaf. Lightly grease a baking tray and lay the loaf on top of it. Slice a cross in the top of the loaf with a sharp knife. For a glossy finish, brush the loaf with a whisked egg.
Step 4
Bake for 40 mins, or till golden and it sounds a bit hallow when tapped. Cool for 20-30 mins before serving. Gorgeous with a hearty soup.
