Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour. • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. • Prepare the filling: In a large mixing bowl, toss the apple slices with lemon juice. Add the granulated sugar, brown sugar, cinnamon, nutmeg, salt, and cornstarch, and mix until the apple slices are evenly coated. • Roll out the chilled dough on a lightly floured surface into a circle, about 12 inches (30 cm) in diameter and 1/8 inch (3 mm) thick. Transfer the dough circle to the prepared baking sheet. • Arrange the apple slices in the center of the dough, leaving a 2-inch (5 cm) border around the edges.
