Ingredients

4chicken breasts
large, sliced lengthwise to make thinner for faster cooking

1 tinpineapple in juice
small

½ cupsoy sauce

coriander

1tomatoes

1Lebanese cucumber

cucumber

1red capsicum

1 stickcelery

1red dried chilli

½ teaspooncumin powder

1 teaspoonsmoked paprika

2 tablespoonssmokey barbecue sauce

2 tablespoonslow fat mayo
Instructions
Step 1
Slice the chicken breasts lengthwise to make them thinner to cook faster. Marinate the chicken in the pineapple juice and soy sauce at least one hour. Chop the coriander and add to the pineapple and vegetables all cut into bite size chunks. Add the spices and the BBQ sauce and mayo.
When you are ready to cook, discard the marinade and fry the chicken breasts in a non stick skillet until cooked through. Top with the salsa and serve imediately.
