Stir-fried Prawns with Pepper and Salt

Stir-fried prawns with pepper and salt is a common family dish in China. Prawns are not only tasty but also low in fat, making them a favourite among health-conscious people. The dish is easy to prepare, crispy on the outside and tender on the inside, making it very popular with families.

Instructions
Step 1
Shred the bell pepper, then dice it; dice the onion; slice the garlic; dice the ginger.
Step 2
Remove the head of the prawn; poke a toothpick into the penultimate section of the tail and pick out the intestines. Because there is a lot of dirt inside the intestines of the prawns.
Step 3
Cut the back of the prawns with a pair of scissors; doing so allows the flavours to get inside the prawns.
Step 4
Wash the processed prawns; absorb the water with kitchen paper.
Step 5
Marinate the prawns: pour 1 tbsp cooking wine and 2 g salt into a bowl, mix well and marinate for 15 minutes.
Step 6
Add 1 tbsp of cornstarch to the marinated prawns and mix well.
Step 7
Turn the gas on to high heat and when the oil is hot pour about 50 ml of cooking oil into the pan.
Step 8
Add the prawns to the pan and fry; when golden brown, turn over and fry on the other side until both sides are golden brown and set aside in a bowl.
Step 9
Add the ginger and garlic to the pan and stir-fry until browned.
Step 10
Add the diced pepper and onion to the wok and stir-fry for about 1 minute.
Step 11
Add the prawns to the wok and stir-fry well. Pour 1 tbsp soy sauce and 1 tbsp cooking wine into the wok and stir-fry well.
Step 12
After stir-frying for about 2 minutes, add about 10g of pepper and 2g of salt to the pan, stir-fry well and enjoy!
