Instructions

Step 1
Slice pork tenderloin into thin slices, marinate with salt, black pepper powder and cooking wine.
Step 2
Mix sweet potato starch thoroughly with water in a bowl to get a smooth texture, add batter in the pork to mix, and make sure all pork slices are evenly coated with potato starch.
Step 3
Shred green onion, carrot, and slice garlic, ginger and cilantro for later use.
Step 4
Prepare sweet and sour sauce with sugar, white vinegar, salt, light soy sauce and sesame oil, mix it well.
Step 5
Heat up olive oil in the pot and adjust the heat from high to medium. Place pork slices coated with potato starch in the oil one at a time, and use chopstick to separate them from sticking. Remove fried pork pieces from the pot once they are brown-ish. Then put cooked pork pieces back in the hot oil for a second fry to obtain a golden brown coloring.
Step 6
Pour some heated oil in the pan, add sweet and sour sauce in the skillet and add sliced garlic, shredded carrot and onion white in the pan to stir fry for 10 seconds. Lastly, add pre cooked fried pork in the sauce to mix until the sauce dries out; Garnish with sliced cilantro before plating. Ready to serve.
