Ingredients

4 cupsFresh Cauliflower
36.4boneless chicken breast
cut into cubes ~ yields 24 oz cooked
2 Tbspbutter
4 healthy fats
3garlic cloves
3 condiments
cilantro
chopped, for garnishing
2 tspSriracha
chicken
to coat
¼ cupParmesan cheese
½ tspGarlic Powder
½ tspPaprika
1 condiment
⅛ tspSalt
1/2 condiment
¼ tspPepper

Instructions
Step 1
* Cut Cauliflower head to small florets. Clean under the running tap. Drain excess water.
Step 2
* In a food processor add Cauliflower Florets. Pulse until you get rice like texture.
Step 3
* In a mixing bowl add all the ingredients mentioned under 'To Coat Chicken'
Step 4
* Coat Chicken pieces with the seasoning mixture.
Step 5
* Heat a pan. Add one tablespoon of butter.
Step 6
* Arrange coated chicken pieces in a single layer. Cook for 2-3 minutes. Turn each pieces and cook further for 2-3 minutes. Chicken pieces would look crispy and golden brown in color.
Step 7
* Remove cooked chicken pieces from the pan and keep it aside.
Step 8
* To the same pan add remaining butter. Add minced garlic.
Step 9
* Once the raw smell is gone, add cauliflower rice and cover.
Step 10
Cook for 5-6 minutes.
Step 11
* Add cooked chicken. Season it with salt and pepper. Mix well.
Step 12
* Add chopped parsley or cilantro. Mix well.
Step 13
* While serving add a dash of Sriracha.
