Instructions

Step 1
Warm milk on medium-high, stirring constantly, heat to 185 degrees.
Step 2
Add 1/4 cup of apple cider vinegar, right away you will see curds forming. Stir constantly until white curds become obvious and whey becomes a shade of yellow. Add a little more vinegar (1 teaspoon at a time) if curds don't happen around 190 degrees.
Step 3
Scoop the curds out into the cheesecloth, pick up the cheesecloth and let liquid drop for few minutes and move curds around in the cloth.
Step 4
Place salted butter in a bowl and add the curds to the bowl. Mix and melt the butter. Sprinkle 1/4 tsp of baking soda and mix.
