Matcha Green Tea with Cashew Pistachio Frosting

Ingredients
6 servings

1 CCupcakes
almond meal or flour

½ tspbaking soda

salt

2 Tbsmatcha green tea powder

2 Tbsraw cane sugar
or honey

½ tsplemon zest

2 Tbscoconut oil

1egg

1banana
mashed

1 Tbsalmond milk
or coconut, OR 1/2 C if you want to leave out the banana

¼ cwater

1 tspvanilla extract

1 Tbshoney

0.25 Cpistachios
Topping, crushed

½ cupscashews
Instructions
Step 1
Preheat oven to 350F

Step 2
In a small bowl mix together dry ingredients, almond meal, baking soda, salt,matcha and sugar

Step 3
In a bowl mix together wet ingredients, coconut oil, egg,banana, coconut or almond milk, combine with dry ingredients and don't over mix.

Step 4
Put 6 cupcake papers in a muffin pan and fill cupcake papers ¾ of the way up, bake for 20-25 minutes

Step 5
In a blender or food processor add the strained cashews, coconut oil, vanilla, honey and a pinch of salt, slowly add the water until the consistency is thick yet spreadable and super smooth and creamy.
Step 6
Let the cupcakes cool before spreading with cashew cream frosting, top with crushed pistachios.
