Step 1
Blitz the biscuits in a mini chopper.
Step 2
Liquidise the butter in the Microwave for about 2 minutes. Mix the biscuit and butter and press into the cheesecake base. Put to one side.
Step 3
Using my old fashioned 70's Kenwood I whizzed the cream until nearly thick. Now add the cream cheese, caster sugar, lemon zest and juice. Mix until really thick.
Step 4
Using a spatula press the mixture on to base and then decorate with sliced lemons and extra grated zest.
