Instructions

Step 1
Preheat your oven to 190°C/gas mark
Step 2
Arrange the potato slices over the top and sprinkle with the remaining cheese.
Step 3
Cook the sliced potatoes in a pan of boiling water for 10 minutes to soften.
Step 4
Cook in the oven for 25 minutes, or until the potatoes are a nice golden brown.
Step 5
Season the diced chicken well, then fry in a splash of olive oil in a saucepan (or ovenproof dish) over a medium heat for about 5 minutes.
Step 6
When the chicken starts to brown, add the onion and bacon.
Step 7
When the bacon starts to crisp up, add the garlic and continue to fry for a minute.
Step 8
Next, add the flour and stir it in for a minute.
Step 9
Then, add the milk, little by little, stirring continuously, to create a sauce.
Step 10
When all the milk is added, throw in most of the grated cheese and stir it into the sauce.
Step 11
Remove from the heat, stir in the spinach and transfer the mixture to an ovenproof dish (if you were using a saucepan).
