Instructions

Step 1
Pre heat oven to 170ºC/325ºF/gas
Step 2
Dust the duck with salt, inside and out
Step 3
Dust with five spice all over
Step 4
Grate ginger over and put any left over inside cavity
Step 5
Bake for 2hrs, skin should be crispy. If not you can increase to 200ºC/400ºF/gas 6
Step 6
Chop spring onions and cucumbers julienne
Step 7
Take duck out and shred with 2 forks.
