Mix dry ingredients together. Use oil or lard not both. Put fat in, then pour in the water. Make sure it's as hot as you can handle. Mix together in mixing bowl until combined well. Dough should be tacky and moist. Place on counter and knead for 5-10 min. Do not add flour to work surface. After kneading, place dough in bowl and cover with a damp paper towel for 15 min. You can cut dough into balls before resting. Balls should be about 55 grams each or so. After resting. Lightly flour work surface and roll out. Cook tortillas on pan over medium heat (5-6) until bubbles start to form, then flip. Keep hot in paper towels covered with foil.
