Ingredients

3jalapenos

1 lbground meat
pork or turkey is best, can also use beef

0.5onion
diced, either yellow or red works

3cloves garlic
crushed

2 Tbspolive oil

1 tspsugar

¼ cupsoy sauce

2carrots
large, shredded

3limes
juice of

4scallions
chopped
0.5bunchcilantro
chopped

⅓ cupmayo

2 Tbspsriracha
or to taste

Instructions
Step 1
Chop the jalapenos and put in a dish with the juice of 2 limes and salt to taste. Mix well to coat the jalapenos in the lime juice. Refrigerate for a few hours or overnight to make lime-pickled jalapenos.
Step 2
Heat the olive oil over medium high heat. Add the onions and saute until transparent, 2-3 minutes.
Step 3
Add the ground meat and cook, breaking up any large pieces with a spoon. Saute, stirring occasionally, until the meat is cooked through and beginning to brown.
Step 4
Add the sugar, crushed garlic, and soy sauce to the meat mixture, along with salt and pepper to taste. Stir well and cook for another 1-2 minutes until a thick sauce has formed. Set meat aside.
Step 5
To make the spicy mayo sauce, combine the mayo, sriracha, and juice of 1 lime. Add salt and pepper to taste and stir to combine. Set aside.
Step 6
To build the bowls, start with a serving of cooked rice. Top with the ground meat mixture, lime-pickled jalapenos, shredded carrot, chopped scallions, and cilantro. Top with a generous portion of spicy mayo, and additional lime wedges to serve.
