G - 10-Min Creamy Haddock Florentine Spaghetti

Instructions

Step 1
Skim through these steps, then wash your fruit and veg.
Step 2
Boil a full kettle.
Step 3
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat.
Step 4
Chop the plum tomatoes in half.
Step 5
Wash the spinach (if unwashed).
Step 6
Once hot, add the roasted garlic paste, cherry tomatoes and spinach to the pan and cook for 2 min or until the spinach has wilted.
Step 7
Meanwhile, dissolve vegetable stock cube in 150ml boiled water.
Step 8
Add the spaghetti to a pot of boiled water with a large pinch of salt, then bring to the boil over a high heat.
Step 9
Cook the spaghetti per package instructions, or until cooked with a slight bite.
Step 10
Once done, drain the spaghetti.
Step 11
Once the spinach has wilted, add the vegetable stock to the pan with the soft cheese and stir it all together. Cook for 1 min further or until the sauce is starting to thicken.
Step 12
Cut the haddock into bite-sized pieces, and then add the haddock bites to the pan with a pinch of salt and cook for 2-3 min further or until cooked through. -- Tip: Your fish is cooked once it turns opaque and flakes easily.
Step 13
Once the fish is cooked, stir through the drained spaghetti and most of the grated Italian hard cheese (save the rest for garnish!).
Step 14
Set the creamy haddock Florentine spaghetti in the centre of the table, ready to share.
Step 15
Garnish with the remaining grated Italian hard cheese, season with a good grind of black pepper and let everyone dig in.
