Instructions

Step 1
Preheat oven to 425
Step 2
Cut potatoes into 1/2 inch thick wedges. Halve, peel and thinly slice onion. Peel and mince or grate half the garlic clove.
Step 3
Toss potatoes on a baking sheet with a drizzle of oil, half the fry seasoning and salt/pepper.
Step 4
Roast on top rack until browned and crispy, about 20-25 minutes.
Step 5
Heat a drizzle of oil in skillet over medium heat. Add onion, cook, stirring occasionally, until browned and softened, 8-10 minutes.
Step 6
Stir in vinegar and 1 tsp sugar. Continue cooking until onion is caramelized and jammy, 2-3 minutes. Season with salt/pepper.
Step 7
Turn off heat, transfer to small bowl, wash out pan.
Step 8
In second small bowl, combine mayonnaise with a pinch of minced garlic (to taste), season with salt/pepper.
Step 9
Form beef into Pattie’s, slightly wider than buns, season all over with salt/pepper.
Step 10
Heat drizzle of oil over med-high heat. Add patties, cook until browned, 3-5 minutes per side.
Step 11
In last 1-2 minutes of cooking, top each patty with Monterrey jack cheese, cover pan until cheese melts & patties reach desired doneness.
Step 12
Toast buns, spread with ketchup & garlic mayo to taste and as much onion jam as wanted. Serve with potato wedges on the side.
