Ingredients

15mlolive oil
400gwhite onion
lg, chopped
10ggarlic
diced
1Jalapeño
chopped and seeded
120gPoblanos
chopped and seeded
1 lbground beef
800gCans Kidney beans
400gcan black beans
30gChili Powder
10gCumin
5gCoriander
6gSalt
2gGround Black Pepper
to taste
1200gCans Tomatoes
Diced, or Crushed
200gcan tomato paste
1.5 LTomato Juice
Instructions
Step 1
Heat oil in a large pot on medium heat until shimmering
Step 2

Add onions, peppers, garlic, and beef. Cook until onions are soft and beef is cooked stirring occasionally (About 8-10 minutes).
Step 3

Rinse and drain the beans. Add them to the pot with the spices. Cook for 2 minutes, stirring frequently.
Step 4

Add the tomatoes, tomato paste, and tomato juice. Stir to combine. Bring to a boil.
Step 5
Reduce heat to a simmer and simmer for 1 hour stirring about every 10 minutes. If the mixture starts to thicken too much, add more tomato juice.
Step 6
Taste and adjust seasonings. I sometimes add cayenne pepper if the fresh peppers aren't hot enough.
