Beef Stew

This is a super hearty, but healthy beef stew with lots of veggies. Make it your own by substituting veggies as you wish. Add more or less beans. Customize however you desire, but the overall method is fool proof and easy!

Instructions

Step 1
Get a dutch oven fairly hot. Sear the beef and remove. Hold beef off to the side. don't worry about it being fully cooked. Just sear the outside.

Add onion, garlic, and bell pepper to pot. Add salt, pepper, and smoked paprika. Cook 2-3 minutes. Add tomato paste and cook another 2-3 minutes.

Step 3
Add beer and Worcestershire sauce. Reduce by 50%. be sure to scrape bottom of pot to get up any leftover beef goodies (fond). Add beef broth, water, and herbs. Bring to a low boil.

Step 4
Once low boil is achieved add back the beef and immediately reduce temp to a low simmer. Cook partially covered for about 45 minutes.

Step 5
Add veggies, beans, and potatoes. If necessary, add more water to maintain soup status. Cook uncovered about 1 hour, or until beef is tender. Be sure to taste for seasoning and adjust as necessary.
