Step 1
1. Make dressing - combine the olive oil, lime juice, mustard and mint in a small bowl and whisk together well.
Step 2
2. Toast pine nuts in a frying pan over a medium heat for about two minutes. Tip on a plate and set aside.

3. Slice the courgettes into long wide strips and place in a bowl. Add the avocado and mixed salad leaves. Season with ground pepper and toss lightly.
Step 4
4. Scatter the prawns on top and sprinkle on the pine nuts. Drizzle with the dressing to serve.
