Instructions

Step 1
Apply olive oil to pan and heat gently, add sliced onion and garlic and cook gently until browned. Add carrot and celery. Continue to sauté until vegetables are steaming. Add drained soaked dried mushrooms. Reserve the liquid. Add water to make 4 cups. Stir in bullion. Season with pepper. When heated through add wild rice. Simmer for one hour. Near end of the hour sauté the slices of white mushroom until softened and then stir them into the soup. Correct seasoning, add lemon juice and hot sauce if desired.
