1 ¼ cupsoil

2 cupssugar

4eggs

1 teaspoonvanilla

3 cupsgrated carrots

8 ozcrushed pineapple
drained

2 cupsflour

2 teaspoonsbaking powder

1 teaspoonbaking soda

1 teaspoonsalt

2 teaspoonscinnamon

1 cuppecans
chopped, or walnuts, optional

4cream cheese

¼ cupbutter

2 teaspoonsvanilla

1 teaspoonorange zest

2 cupspowdered sugar

milk
as needed, a teaspoon at a time
Instructions
Step 1
Preheat oven to 350°. Grease a 9 x 13 inch pan.
Step 2
Whisk together 1 1/4 cups oil, 2 cups sugar, 4 eggs, and 1 tsp vanilla.
Step 3
Stir in carrots and pineapple.
Step 4
Stir in 2 cups flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp salt, 2 tsp cinnamon, and 1 cup chopped nuts.
Step 5
Pour into the greased pan and bake for 50-60 minutes. Cool completely before frosting.
Step 6
For the frosting: Soften cream cheese and butter, and beat together until smooth. Add the vanilla and orange zest. Beat in the powdered sugar until you get the consistency you like. You can add milk 1 tsp at a time if you need to.
