Instructions
DOUGH
Step 1
Combine water, yeast, and honey in a small bowl or measuring cup. Stir to combine and set aside for 5 minutes.
Step 2
In a separate bowl, combine flour and salt, and stir to combine.
Step 3
Add the yeast-water mixture to the flour, while stirring/ folding until most of the flour is moist. Continue kneading the dough for 4-5 minutes by hand. Cover and seal with lots of space for the dough to rise, and set aside for 4-6 hours in a warm location (room temperature).
Step 4
Once the dough is ready, scrape out of bowl onto a well floured surface and coat surface of dough with flour to prevent sticking. Split into two halves, and form into balls. Fold each dough ball into itself at least 3 times. If only making one pizza, set aside second dough ball in a sealed oiled container with folded side down.
Step 5
When ready to make pizza, preheat oven to 525 F. If you're using a pizza stone, put it in the oven before starting the preheat.
TIPS
Step 6
We've tried every possible way of assembling the pizza ahead of time while the pizza stone is preheating in the oven, but always end up squishing half the pizza or dumping the toppings on the stone.
Easiest, fool-proof way to do it is to let the stone heat up, and get all the ingredients ready - flatten dough, shred cheese, chop toppings etc. Once the oven is heated, pull out the stone out, sprinkle some corn flour on the stone, then transfer over the flattened dough and assemble pizza directly on the stone

Depending on your oven, bake for 12-15 minutes. Keep an eye on it!
