Instructions
Step 1
Place chopped cucumber into a salad bowl with shallots, spring onion, chilli & cucumber
Step 2
Combine soy sauce, lime juice, minced garlic, cayenne & sugar stirring to dissolve the sugar. Taste to test whether it is sweet or sour enough, adding more sugar or soy sauce depending on your preference
Step 3
Pour dressing over salad and toss well. Garnish with peanuts, coriander & sliced lime
